Thai Korean Fusion Cucumber Salad

3-4 Persian Cucumbers
1 lemon cucumber (or another variety)
1/4 C Fresh Mint
1/4 C Fresh Cilantro
2 Tbsp. Gochujang Korean Fermented Red Pepper Paste
1/2 C coconut milk with cream
1-2 Limes, Juice of
1/4 Red onion, diced
1/2 Jalepaneo, diced
Cracked Pepper and Himalayan Salt
1 Claw of Crab, meat only
Directions
1 . Prep all the ingredients
2. Gently fold in all the ingredients.
3. Place in jar. Gently shake or toss in a bowl.
4. Place in the Fridge for a minimum of 20-30 minutes or over night.
5. Perfect as simple meal or a side dish.
Tree Friend
Crape Myrtle is popping up in my neighborhood* I feel the beautiful flowers are an invitation to forgive self, heal your wounds and prepare yourself to discover your truth. Bonus the flowers make a wonderful tea for seasonal disharmony in the head and chest. In addition, the leaves can be made into a tea too. Myrtle loves to support the kidneys and bladder via her leaves. Coupled with the root being astringent and willing to assist in keeping your waters flowing. The bark helps purify the system as needed. The leaves and flowers like comfrey serve as nature’s “band-aide” calming a wound down. The berries are a culinary spice that can be ground up and used to season a meal on the go or at home. Finally, overall Myrtle’s energy is one that will welcome you to calm down and reclaim your courage.
Tree Friends, Myrtle is a Great one to CHOOSE amongst others.
I have always encouraged my students and clients to have a few tree friends and the reason for this is because the majority of humanity has felt ALONE at one point or another in their life. I hear often in my private practice.
The reasons for spending time with trees is proven scientifically. However, the actual proof is in trying it for yourself and seeing what the results are. A tree is an inviting place to have a rest, read a book, meditate and enjoy a meal. I have extended nature to my family, students and clients as a remedy because it has worked for me all my life. In fact, I use to tell my parents I was going to the mall and I would drive up to a magical canyon and river, just to be. Trees and all of nature are the most powerful nourishment you can ever give yourself.

Plant Friend
Fennel. I adore fennel and use her consistently in my kitchen. I often blend fennel in custom spice blends I create for my clients. The reason for this is because it is over arching gentle (yet the flavor is not relished by all). Fennel like Myrtle will calm you down.
Something to try, If you feel a little uncomfortable after a meal, heat up some water and steep for 3-5 minutes about 1/4-1/2 tsp of dried fennel. Then, sip slowly. You can even chew on the seeds. Stay with the warm water and fennel until you feel calm and clear.
