Chewy Granola Bars

Ingredients
1-1/2 Cup Organic Oats
2-3 Tbsps. “Nut/Seed” Butter
2-3 Tbsps. ‘Local’ Honey
1-2 tablespoons Coconut Oil
1/4 Cup Dried Coconut
1/4 Cup Dried Cranberries
1/4 Cup Cacao Chunks, Chips
4-5 Large Dates
1/4 Cup Brown Rice Syrup
1 tsp. Cinnamon
1 tsp. Cardamom
Directions
Preheat oven for 250 degrees F.
Please a parchment paper on a jelly roll sheet.
In a bowl, toss together: oats cranberries, dried coconut, cocoa chips, cinnamon, and cardamom.
Then, blend in ‘nut’ butter and brown rice syrup.
Lay out on the sheet and toast for 15 minutes.
Then, add the dates, coconut oil and honey to blender or similar device. Blend.
Remove granola from the oven. Let cool.
Then blend the date mixture into the toasted granola. Gently mixing and pressing.
Next, between two pieces of parchment, press the mixtures together till uniform.
Place in the fridge for 10-15 minutes.
You can cut into bars or use a cookie cutter. Store in an airtight container.
You can also dip in chocolate or sprinkle on top.

Grapefruit Avocado Bliss

Ingredients
1 Grapefruit, sliced in chunks
1/2 avocado, sliced in chunks
1 Tbsp. ‘Local’ Honey
2 Tbsps. Coconut Flakes
1/4 Cup Sprouted Pumpkin Seeds
1 tsp. Chili Pepper
Himalayan Salt and Cracked Pepper
Directions
Scoop out the grapefruit and reserve one halves for a bowl.
Slice the grapefruit and avocado chunky.
In a bowl, mix all the ingredients.s Step
Gently toss.
Then, fill both halves of the grapefruit.
Serve immediately or place in the refrigerator till you are ready to eat.

Ingredients
4 cups Vegetable Broth
1 cup purple kale, shredded
1 cup sliced shitatke mushrooms
1/2 cup sliced thin maitake mushrooms
1-2 buk choy, sliced
1 purple yam, thinly sliced
2 cloves of garlic minced
1 shallot, minced
1/2 Lemon, juice of
1/2 jalapeno, sliced
1 tbsp. coconut cream
1 tbsp. olive oil
1 tbsp. ghee
2 tbsp, coconut aminos or soy sauce
1 tbsp. fish sauce
Cracked Pepper and Celtic Salt
1-2 tsps. chili crisp oil
Directions
In medium sauce pan, add oil, ghee, garlic, chili pepper, shallots and heat till they begin too gently pop.
Then, add 1/2 cup of the vegetable broth.
Add mushrooms and buk choy.
Stir till blended.
Then, add the remaining vegetable stock and water if needed or you can add later.
Then, add fresh lemon juice and kale. Stir often.
Add the coconut aminos and fish sauce. Stir in gently.
Simmer on low heat for 45 minutes. Taste mid-way though and add additional spices as needed. Add water as needed to have a brothy soup.
When ready to serve add the chili crisp oil to the top.
Serve in bowls with warm bread on the side. Enjoy.
Winter is the Season to abide in mushrooms. They are plentiful and compliment seasonal ingredients. With more and more use of mushrooms from the kitchen to a lucid moment in nature, humanity’s consciousness is being rewired like it or not. Blue Corn Pancakes

Ingredients
3/4 Cup Organic Bluecorn meal
3/4 Cup Organic Flour
1 Tbsp. Coconut or Brown Sugar
1/2 Cup a Milk of your choice
2 Tbsps. Ghee or Butter, melted
2 tsp. Baking Powder
1 tsp. himalayan salt, fine ground
1 Cup 0f Boiling Water
1 tsp. Cinnamon
Directions
In medium bowl, mix blue corn salt, and sugar.
Then, add boiling water. Let rest
In another bowl, combine milk, egg and slowly add melted butter. Temper to keep the egg from cooking.
Then, pour into the dry blue corn mixture. Gently stir till well blended. Add more milk or warm water, if needed.
Heat up a cast iron skillet or iron griddle over medium heat. Then, add oil or butter.
Place a 1/4 cup of the batter on the griddle. Smooth into a circle.
Then, place on a cutting board and use a cookie cutter to make the heart shapes.
Dust with powder sugar.
Serve immediately with fresh betties, syrup, whipped cream and anything else you would like on your pancakes.
