Celery & Mushroom Soup with Mix Green Side Salad
Here is a recipe that nourishes the Spring energy rising in you.
1 Tbsp. Ghee
1 Tbsp Olive Oil
4 Celery Ribs (Chopped)
1 Red new Potato, Peeled & Chopped
1/4 tsp. Thyme
1/2 tsp. Dried Basil
1/4 tsp Oregano
1 tsp. Himalayan Salt
1 C. Water or Vegetable Stock
3/4 C. Coconut Milk
1 Tbsp. Chopped Cilantro
1/2 Lime (Juiced)
Himalayan Salt & Cracked Pepper to taste
1.Steam the celery, red potato, mushrooms and onion in a stop top steamer or a wok with a little water and lid till soft.
2. In the blender, add steamed veggies, spices, ghee, olive oil, vegetable stock and coconut milk (reserve some of the liquids to adjust to the consistency you prefer)
3. Serve with fresh cilantro and lime juice…add salt and pepper to taste
Serve with a Mixed Green Salad
- Mixed Green Salad 2 Cups Spring Mixed Greens 1 Tbsp Olive Oil Juice of 1/2 Lemon 1 Avocado Salt and pepper to taste Instructions: 1. Place Greens in a bowl 2. Mix: Oil, Salt, Pepper and Lemon in small side bowl 3. Serve with fresh avocado and dressing on top with a bowl of soup
