Summer Dessert
Beach Brownies + Plum Compote

1/2 C Olive Oil
1 tsp. Vanilla
1 tsp. Cinnamon
1 tsp. Cardamom
1-1/2 C Brown Sugar or Coconut Sugar
4 Eggs
1-1/2 C Organic Slow Cook Oats
1/2 C Semi-Sweet Chocolate Chips
1/4 C Cocoa Disks or Cocoa Powder
- Plum Compote
4 Plums, sliced and pitted
1 tsp Cinnamon
1/2 tsp Cloves
1/2 tsp Cardamom
1/2 C Brown Sugar
1 Tbsp. Olive Oil
Directions
Pre-Heat Oven to 325 degrees F
Grease and flour a 8 to 9 inch cake round or cheesecake pan, set aside.
Place all ingredients in a blender except the eggs and oats.
Blend. Then, add the eggs one at a time, pulse in-between each egg.
Then, add oats and blend till mixed.
Pour into the prepared pan.
Bake to 40-50 minutes.
Cool on wire rack. Then, remove from pan.
- Plum Compote
Place all plum compote ingredients in a sauce pan.
Cook on Low heat for 40-50 Minutes.
Remove from heat once the plums are soft.
Cool on stove top.
Pour in Blender, Pulse and Puree.
Plate the Brownie and pour over the Plum Compote.
Enjoy.

Heart Food
Basil is a friend and ally during the incoming Summer and Winter months. Many of you are familiar with Basil from your favorite Italian, Thai, Chinese, Greek and Indian Cuisines. This plant transcends many continents and countries. It is a unique manifestation and friend in gardens, recipes and remedies. It was noted here, Basil was first cultivated over 5,000 years ago in either China, India, or Africa. You can see the variety in the link above. Yet, this only shows a few. There are 50 to 150 species of Basil.
I have a deep love for sweet, sweet basil. She has made her way in many forms into my heart, garden and recipes. I have found some varieties are hearty enough to stay with me year around, like the Thai Basil Plant. This is super helpful plant to have around in the Winter, especially during the seasons where you might have a cold or “flu”. It is the perfect add to Thai Tom Yum Soup. While other versions like Genovese Gigante are primarily bountiful in Spring and Summer. However, you might be able to keep this plant growing in a green house or your kitchen. The Genovese Basil is the perfect add to summer pasta dishes, bruschetta and even a traditional Greek salad welcomes some sweet basil. Anyway you turn to Basil, I would say this she is one of the world’s precious herbal and culinary gifts that is effortless to include in all your seasonal cooking and home remedies.
A few simple reminders about basil, if her leaves are delicate she prefers you use your hands to break down her leaves. She finds metal to be very aggressive especially in the form of a knife or culinary equipment with blades. This is why our ancestors used their hands and a mortar and pestle. Yes, those machines can be handing; however, if inspired, slow down and learn how to blend this sometimes delicate herb in new (old) ways. You can also keep the leaves in tact and add towards the end to a soup, sauce and/or salad.

Brain Food
Bi-Lateral Movement. Brain Health. I talked about this during Spring, how bilateral movement is helpful for your liver health. It is also very beneficial for healing trauma, processing emotions and heart+brain health. During Summer, there are longer days and more opportunities to get your body moving and plenty of options for bilateral movement. These can include walking, running, dancing, skating, swimming, bowling, rowing and/or machines in the gym that give you the opportunity to move your arms and legs simultaneously. By using your entire body in a receptive motion, you are charging, repairing and regenerating your brain. Literally and figuratively. You are an electromagnetic being and can give yourself a reboot with daily bi-lateral movement. As inspired, get your body moving.
Cause and Effect…the constant. Every action we take effects out entire universe. Each day I am in a practice to clear karma and embracing mindful actions, generating beneficial karma. It is a practice and I have found humility is my faithful guide; especially when or if I loose site of the true impact my mind, words and actions have on myself and the world around me. As inspired, bring awareness and observation to the quality of your thoughts, words and actions. Just observe without judgement. Then, you will begin to realize where you want to focus your attention.
