Tree Friend
Date Palm Friend. While those who live in California (especially the southern coastal areas and desert regions) have more than likely walked across the fallen orange balls, at this time of year. While, some might consider them messy, I consider them a reminder of how abundant nature is. These date palms create a pretty generous snack or fun addition to many recipes. I was amazed to learn that one mature tree produces 150-300 pounds (70-140 kilograms). Considering that it best to eat less than a 1/4 cup per day, one tree could feed many. Our Tree Palm Friend, provides food and debris that can be woven into baskets, mats and become a strong building material. There are many uses for this tall and simple friend that is always waving, ‘HI!’.

Peach Stack

minutesPeach Stack was inspired by ‘national ice cream sandwich day’. That is how an inspiration works. This has nothing to do with ice cream or a sandwich. Yet, the inspiration flowed from there coupled with a few ripe peaches from my kitchen.
Ingredients
Fresh Burrata, 8 small balls
2 Peaches
1/2 C Blueberries
1 tbsp. Honey
1/4 C. Balsamic Vinegar
Cardamom
Cinnamon
Pink Himalayan Salt
Directions
Simply slice the peaches, place a drizzle of balsamic on the first layer, then add a ball or two of burrata and lightly season with honey, balsamic, cardamom, cinnamon and then add the blueberries.
Stack and repeat 2 more times and top the top layer with one more ball of burrata and blueberries.
Make it fancy with some garden green edibles and a fresh sliced fig. It will not disappoint.
