Sweet Potato with Seed Granola Yogurt Drizzle

minutesYou can toast up a batch of coconut seed crumble for effortless use daily. Stew the fruit fresh daily. Then, add fruit to a freshly roasted sweet potato.
Ingredients
1 Sweet Potato, roasted
1/4 cup Coconut seed crumble
1/4 Cup Blueberries
2-3 Dried Figs, chopped
1 Green Apple, Medium Chopped
1 T. Ghee
1 T. Coconut Oil
1 T. Maple Syrup (or to Taste)
2-3 T. Coconut Seed Crumble
Spices: 1/4 tsp. Cardamom 1/2 tsp. Cinnamon, 1/4 tsp. Clove, 1/8 tsp. Nutmeg
1/4 C Greek Yogurt
1 tsp. Local Honey
1 tsp. Mint, chopped
- Coconut Seed Crumble
1/4 C coconut flakes or shredded
1 C pumpkin seeds
1 C sunflower seeds
1/4 C sesame seeds
1/4 C Brown Rice Syrup
3 Tbsp. A Nut or Seed Butter
3 Tbsp. Local Honey
1-2 Tbsp. Coconut Oil
Directions
Roast the sweet potato in the oven at 350F for 30-45 minutes, until tender.
Place the ghee and olive oil in sauce pan. Begin to warm and add the spices.
Then, add the fruit, coating with spices and oil/ghee.
Stewed in 1/4-1/2 Cup Water on the Stove Top on low heat monitor closely.
Heat till the consistency that you like. Then, serve over the top of the sweet potato.
Remove from heat and add the Maple Syrup and Coconut Seed Crumble.
Hand whip the yogurt, honey and mint. Drizzle on top.
Enjoy outdoors.
- Coconut Seed Crumble
In a medium bowl mix all the ingredients and blend well.
Lay parchment paper on a baking sheet.
Spread out on a cook sheet, toast for 20-30 minutes on 180-200 F, flip often. Just till golden coconut. Pour into jar. Add Himalayan Salt to taste. Store in glass jar. Shake.
