Crispy Sautéed Potato, Pea & Broccoli Mash Serves Crispy Sautéed Potato, Pea & Broccoli Mash

Serves 5

Golden crispy edges, tender inside with pops of sweet peas and broccoli. Garlic buttery goodness in one pan!

Ingredients:
5 medium-large new potatoes, sliced thin
1–1½ cups peas (fresh or frozen)
1 medium head broccoli, cut into small florets
3-4 garlic cloves, minced
2-3 tbsp Real Butter
2–3 tbsp Olive Oil
Freshly ground Pepper
Chili Flakes (to taste)
1–2 tsp Coriander powder (or fresh coriander)
1-2 tsp. Turmeric 
Himalayan Salt (to taste)

Directions:
1. Dice potatoes, par-boil 6–8 min, drain well.
2. Heat pan with olive oil + butter. Add potatoes, season with salt, pepper, chili flakes & coriander. Crisp 4–5 min.
3. Add broccoli + garlic, sauté 2–3 min. Toss in peas.
4. Cook 5–7 min more until beautifully browned. Mash partially with a fork or masher for rustic texture, or press for extra crisp crust.
5. Finish with extra butter/oil, adjust seasoning. Fresh coriander on top.

Ready in ~25–30 mins.

Combining elements of sound healing, expressive arts, and nourishing tea, you will be guided on a journey of self-reflection toward transformation and growth. If you are holding unprocessed grief or emotions, having a difficult time with change, or are simply curious about this offering, please meet us at Will Rogers Mini Park where we will explore the practice of tending to grief with love and connection to self, the earth, and our ancestors.

We will give you clay to work with, sound to transmute emotions and alchemical tea to lead you there.

@clarebenson Benson is an interdisciplinary artist based in the desert borderlands of the southwestern US, the original homelands of the Tohono O’odham People and the extended homelands of the Pascua Yaqui Tribes, now called Tucson, Arizona. She holds an MFA in Studio Art from University of Arizona. As an artist, her practice embraces materials and processes that are tactile, repetitious, embodied, and slowed-down. She has taught for over six years as a university professor in the arts; spent a year in Arctic Scandinavia working alongside space physicists and indigenous reindeer herders; and since 2019 has worked in funerals and death care, serving as a primary point of contact for bereaved families. Her current research and teaching interests find reverence in the shared space of creative and grief practices, ritual, and the power we have to build meaning through change.

Suzanne Toro is an author, speaker-storyteller, wellness practitioner, and sound + electromagnetic energy therapist. She holds a Bachelor of Science from Arizona State University’s College of Architecture and Environmental Design. Her training includes Ayurveda, herbalism, Tibetan Dreaming Yoga, Eight Limbs of Yoga, ceremony, psycho-spiritual Chinese medicine, and medical nutrition therapy. Here in Southern California, spring is slowly spri Here in Southern California, spring is slowly springing with a summer vibe. While the warm days can lead one to wanting cooler foods…a good compromise is to integrate fermented or marinated salads with cooked foods. 

I made this yummy salad with kale, marinated garbanzo beans, lemon juice, chopped sweet peppers, chopped apples, sliced celery and sunflower seeds. Tossed with Himalayan Salt and cracked Pepper. Then, I placed in a glass jar and into the fridge overnight. 

Next day, a slice of organic olive sourdough bread toasted with a slice of organic butter. Layered the salad ontop with two organic eggs and a small amount of green goddess dressing, a little more pepper and Parmesan shavings. 

Enjoy with presence and a heart filled with love.
