Food Alchemy…Summer Cooking

Food Alchemy is one of my passions and gifts. I found this picture on “facebook”. The memory reminded me of all the fun I had preparing for this photoshoot and Summer cooking classes. I wanted to share an adapted offering for summer cooking classes. To be noted, Summer Cooking Classes (all seasonal classes) are a special way to learn about food and nourish your family and friends.

Personally, I can spend hours in the kitchen. I love getting lost in food and cooking. I enjoy exploring the possibilities, process and exchange with food. From my perspective, cooking is a simple daily practice that will connect you deeper to self and food. Moreover, refining your relationship with food gives you new and exciting ways to feed yourself and those you love.

During my seasonal cooking classes and retreats, I will take you through a process to connect with food and self. Simultaneously, I teach you how to communicate deeper with food. These custom classes will unlock your potential from within. You will transform an aspect of your relationship with food & deepen your connection to the world around you.

Summer Cooking Classes

Today, I was inspired me to share this Summer Cooking Menu. Moreover, I have decided to offer these classes and food alchemy experiences via on-line and in private home experiences. These classes will be available for the remainder of summer through the end of the 2020. I have faith that we will be able to transition back public classes in 2021. Finally, these cooking classes and dining experiences are a great way to experience the fun of cooking, dining and love.

Teriyaki Salmon (Vegetarian, Chicken or Beef Option Available)

Grilled Asparagus Mixed Green Salad

Recipe Serves 4-6 people

Grilled Asparagus Ingredients

4 tablespoons of olive oil

1 cup thinly sliced leeks

1/2 teaspoon of ground garlic

1 lemon

1 Bunch of Asparagus

To Taste: Salt and Pepper 

Salad Ingredients

6 handfuls of mix greens

1 Green Apple, sliced thin

1/4 Cup Crumbled Goat Cheese

1/8 Cup Slivered Almonds

1/4 Cup Fresh Basil Leaves

Dressing Ingredients and Prep

3 lemons, juiced

1/2 c olive oil

To taste: salt, pepper, honey and thyme

Instructions: mix all the ingredients together in a jar. Place a lid on the jar and shake before using.

How to:

Preheat the oven 375 degrees

1. Full stem rub down the body of the asparagus. Oil, lightly salt and pepper.

2. Oil a jelly roll pan (cookie sheet with an edge) and place the asparagus on and then in the oven. Cook for 30 minutes to soft and roasted. 

3.  Remove from oven and allow it to stand still while they cool off. (A good idea for any of us)

4.  Heat 2 tablespoon of olive oil in a small saute pan. Saute leeks and garlic. 

5.  Take greens, layout on a platter, add fresh basil big leafs, asparagus, apple, goat cheese and almonds, Dress with leek mixture. Offer dressing on the side.

@clarebenson Benson is an interdisciplinary artist based in the desert borderlands of the southwestern US, the original homelands of the Tohono O’odham People and the extended homelands of the Pascua Yaqui Tribes, now called Tucson, Arizona. She holds an MFA in Studio Art from University of Arizona. As an artist, her practice embraces materials and processes that are tactile, repetitious, embodied, and slowed-down. She has taught for over six years as a university professor in the arts; spent a year in Arctic Scandinavia working alongside space physicists and indigenous reindeer herders; and since 2019 has worked in funerals and death care, serving as a primary point of contact for bereaved families. Her current research and teaching interests find reverence in the shared space of creative and grief practices, ritual, and the power we have to build meaning through change.

Suzanne Toro is an author, speaker-storyteller, wellness practitioner, and sound + electromagnetic energy therapist. She holds a Bachelor of Science from Arizona State University’s College of Architecture and Environmental Design. Her training includes Ayurveda, herbalism, Tibetan Dreaming Yoga, Eight Limbs of Yoga, ceremony, psycho-spiritual Chinese medicine, and medical nutrition therapy. Here in Southern California, spring is slowly spri Here in Southern California, spring is slowly springing with a summer vibe. While the warm days can lead one to wanting cooler foods…a good compromise is to integrate fermented or marinated salads with cooked foods. 

I made this yummy salad with kale, marinated garbanzo beans, lemon juice, chopped sweet peppers, chopped apples, sliced celery and sunflower seeds. Tossed with Himalayan Salt and cracked Pepper. Then, I placed in a glass jar and into the fridge overnight. 

Next day, a slice of organic olive sourdough bread toasted with a slice of organic butter. Layered the salad ontop with two organic eggs and a small amount of green goddess dressing, a little more pepper and Parmesan shavings. 

Enjoy with presence and a heart filled with love.

I am a great sunflower lover and all things that a I am a great sunflower lover and all things that are created from a sunflower. It’s pure beauty and sentient way mystifies me. The percision with how it grows in the nature’s creation sequence, as explained by Fibonnaci, leaves me captivated for hours on end. It is truly a breathtaking flower and plant. While over the years there has been a strategic move in the food and health industry to suggest sunflower seeds and many other “seed oils” are bad for you. This is intentional because, guess what, it is GOOD for you. As long as it is not fake or the oil is produced under high heat. Organic, cold pressed seed oils are beneficials for humans. I wrote this for one of my groups and thought this would be a great add to this share here. I will expand upon this further as we head into spring and fall. (Practice: observe when you start repeating sound bites and adopting them as fact without doing extensive research. Sound bites are a intended to control the masses and shape your behavior.)

The Sunflower is deeply acknowledged and scientifically proven to have beneficial nutrition and healing properties in Ayurveda, TCM and in many cultures all over the world. It is actually balancing for all constitutions. In Ayurveda this would be expressed as all three doshas (Vata, Pitta, and Kapha). Its flavor is astringent and sweet. It benefits lungs, liver, skin, heart and more. It is a natural source of vitamin E and color being yellow. . .serves as a friend to assist in healing your life force, engage your will and redirect you to your destiny.
