Recipes: Coconut Mushroom Empanadas, Steamed Crisp Pan Fried Broccoli, and Coconut Cream Mushroom and Chicken Soup.
Coconut Mushroom Empanada
1 Russet Potato (baked + cubed)
1 Cup Seasonal Mushrooms, diced
1/2 Yellow Onion, chopped
2 Cloves of Garlic, minced
1/2 Cup Carrot, chopped
1/2 Cup Celery, chopped
1 cup chicken thigh, diced
2 Tbsps. Butter (Ghee)
2 Tbsps. Olive Oil
1 tsp. Thyme
1 tsp. Himalayan Salt
1 tsp. Cracked Pepper
1 tsp. Chili Pepper
1/2 Cup Vegetable Broth
1/2 Cup Coconut Milk
Homemade Dough or Store Made
Prep, chop and measure all ingredients.
Heat a wok to medium heat. Add the Ghee and oil.
Add onion and garlic. Saute.
Add spice, carrots, celery and chicken thigh.
Saute till it begins to brown and soften.
Add 1/2 cup coconut milk and 2 Tbsp. vegetable broth.
Allow to simmer. As the mixture thickens, add more broth as needed.
Remove from heat. Pre-heat the oven 375 degrees.
Roll out dough into circles 6" in diameter.
Add 2 Tbsps. of filling in the middle of the circle. Then, fold over and seal the edges.
Bake for 20-25 minutes till outside is golden brown.
Add the additional broth to the remaining filling, heat and serve on the side with the empanadas.
