Well it was a Sunday evening…’She’ reached out to a friend to break bread. This dish was inspired by a pairing with Caponata. They were delicious side by side and mixed together. Taking time to co-create a spontaneous meal reconnects self to food and each other.
This dish is can aid in the cleansing of the liver. In addition, it is packed with Protein.
Ingredients:
(always intended never over stated all ingredients organic, in season and local):
1 C. Quinoa
2 C. Vegetable Broth
2 cloves of garlic, minced
2 T Ghee
1 T olive oil
Himalayan Pink Salt and Pepper (to taste)
1 T Dried Basil
1/2 t. Coriander
1/4 t. Chile Pepper (more if you like spice)
1/4 Red Onion diced
2 carrots sliced
1 stalk of celery sliced
1/4 C pumpkin Seeds
1/4 C Hemp Seeds
1/4 avocado cubed
Juice of 2 Lemons
Instructions:
Bring the vegetable stock and the quinoa to a boil cover and simmer for 15-20 minutes until liquid is absorbed.
In small saute pan, add garlic, ghee, and olive oil. Cook till garlic is tender then add red onion. Saute for 30 seconds.
NEXT… add celery and carrots. Squeeze the juice of one lemon on the veggies.
Saute till everyone has melded, softened and merged together.
Once both are ready…grab a bowl and gently mix them together and throw in the seeds and the avocado. Squeeze the remaining lemons over the mixture and gently turn in with a wooden spoon.
(if your liver is in balance you can add a little goat cheese with cranberries on it…supper yummy addition)

Quinoa…high in protein, and the protein it contains is complete, which means it includes all nine essential amino acids. Incas called it the mother grain. (Botanically it is not a true grain but used as one). It is generally strengthening for the entire body. It tonifies the kidneys. Recent research has shown that if one cup of avocado (150 grams) is added to a simple salad, absorption of carotenoids will be increased by 200-400%…
Hemp Seeds…a complete protein source. (ideal balance of Omega 3&6, and it has a massive trace mineral content – truly one of nature’s superfoods.) They contain the most digestible forms of protein. They are a source of antioxidants, fiber, iron, vitamins E and A.
Onions and Garlic…Rich in sulfur-containing compounds. Helps with the elimination of harmful heavy metals from the body.
