2 Cups Spring Lettuce
Juice of 1 Lime
1/4 C Sprouted Pumpkin Seeds
2 T. Ghee
2 tsp. Thyme
1 Sweet Potato, roasted
1/4 tsp. of cinnamon
1/4 C Barley or Quinoa
1 to 1 1/2 C Veggie Broth
1-2 C Kale, chopped
1-2 Ribs of Celery, Sliced
1/4 C Dates, chopped
1/4 Cup Cilantro, chopped
1/4 C Sprouted Almonds
In a bowl, toss together the lettuce, lime juice and pumpkin seeds.
Roast the sweet potato in the oven at 375 degrees for 30-40 minutes, until tender
In sauce pan, add ghee and thyme (or custom spice blend from Suzannne)
Saute Kale and Celery with 1 tsp. thyme.
Add Barley or Quinoa, stir
Add the broth, dates and bring to a gentle boil
Reduce to low and cover for 20 minutes
Plate the barley blend add sweet potato (add cinnamon).
Add cracked pepper and himalayan salt
Enjoy with tossed salad add sprouted almonds and cilantro.
