Winter Months are an opportunity to create meals that nourish and balance your waters. Our water energy is directly connected to our mothers. You know how it goes when you are sick and you just want your mama’s home cooked food or a hug from her. No matter what the age is you might remember yearning for it. These initial seasonal recipes are meant to give you that warm embrace fresh out of the oven or off the stove top. Remember it is okay to be present with the emotion of longing for the mother energy and to receive it through a meal. Especially, if your mother is not close by or in body anymore.
Chewy Chocolate Chip Cookie

minutesA warm sweet treat, welcoming you to feel the hug of a mother. My mother would make us homemade cookies. Everyone that knows Ma Toro's cookies still requests a care package to this day.
Ingredients
2 1/2 C. all-purpose flour, organic
1 tsp. backing powder
1/2 tsp. baking soda
2 eggs, large
1 tsp. vanilla
3/4 tsp. Himalayan Salt
1/2 tsp. cinnamon, ground
14 tbsps. butter, melted
3/4 C. raw sugar, organic
3/4 C. dark brown sugar
2 tbsps. olive or sunflower oil, organic
12 ounces semi-sweet cacao chips
Directions
Pre-heat the oven, 400 degrees, F,rack in the middle of the oven.
Mix flour, baking powder, and baking soda in a medium bowl. Mix eggs, vanilla, cinnamon and salt in a small bowl, set aside. Melt the butter on the stove over low heat. One melted turn off the heat and set aside.
Mix sugars in a large bowl. Then, add butter and oil. Stir until smooth. Next, add the dry ingredients and stir to form a smooth dough.Finally, gently stir in the chocolate chips.
Roll the dough into 1-1/2" balls. Then, place in the freezer for 3o minutes or more.
Place 8 cookie dough balls on one cookie sheet. Then, place in the oven for 8-10 minutes. Once set then reduce the heat to 350^F and bake for 8-10 more. Let cool on a cookie rack.
Repeat with the second batch of cookies.

Chicken Fried Rice

Ingredients
2 C. Jasmine Rice Steamed, chilled
2 chicken thighs, diced
4 eggs
2 tbsp. Olive Oil
4 tbsp. soy sauce
1 tbsp. red chili paste
1/2 yellow onion, diced
1 C. Carrot, shredded
1 rib of celery, diced
2 Garlic Cloves
3 scallions, sliced
1/4 C. butter, sliced
1/2 tsp. himalayan salt
1 tsp. black pepper
Directions
Heat wok with 1 tbsp of oil, then whisk 4 eggs and cook in the wok. Cook till soft. Remove from walk and set aside.
Add additional oil to the wok with onion, carrots, celery and chili paste. Cook for 2 minutes.
Add chicken, half the butter and soy sauce. Cook until chicken is cooked.
Fold in the rice and remaining butter with salt and pepper.
Then, remove from heat and serve with green scallions on top.
Comfort food. Why do we crave salty and sweet? These two tastes nourish our waters and that which is stored in our fascia. This is urge for comfort food will rise up when an unresolved trauma is triggered or a new one occurs. This is typically, why you are emotionally eating and why your mother and/or father might have given you some sort of food to comfort you. With awareness you can make choices that are balanced and still satisfy the urge to be held. Simultaneously, you can do your inner work by maintaining awareness and eating the amount the is healthy for you.
Moroccan Eggs, Shakshuka

minutesShakshuka is a healthy, comfort food from Morocco. This meal works for all times of day or night.
Ingredients
1 tbsp. olive oil
3 eggs
1 tbsp. tomato paste
1-1/2 C chopped tomatoes
1/2 yellow onion, diced
1/2 tsp. ground cumin
1/2 tsp. black pepper
2 Garlic Cloves, diced
1/2 tsp. himalayan salt
1/2 C. broccoli, chopped
1 tbsp. chopped cilantro
1/4 C. Kalamata Olives
Directions
Heat olive oil in a medium frying pan.
Add onion, garlic and 1/2 cup water. Cover and leave on low heat for 10 minutes.
Add tomato paste, chopped tomatoes, spices, salt, and black pepper. Cover and let steam for5 minutes.
Add the eggs into the sauce. Simply place each egg separate from the other. Then sprinkle broccoli around the eggs. Cover and poach the eggs for 5 to 6 minutes.
Then, remove from heat and serve thick toasted bread. Add cilantro and Kalamata olives on top.
Emotions. When you have a significant emotional release. This creates an immune response within your physical and mental body. If it is associated with a past trauma, this can put you into fight or flight. In addition, set you up for getting sick with a viral or bacterial infection in two weeks after the emotional release. Therefore, you want to try to comfort yourself with dishes that do not contain sugar and have immune boosting properties. This is a tricky moment because more than not the sugar what calms perceptually calms you down quickly. This bowl of French Onion Soup or the above Spicy Chicken Friend Rice is such a wonderful alternative that will serve your immune system and cradle your inner self just right.
French Onion Soup

minutesThis bowl of soup will ground and reassure you in moments where you might be feeling vulnerable, sad or homesick.
Ingredients
1/2 Cup unsalted butter
3 Tbsps. Olive Oil
4 Cups Sweet Onions, sliced
5 Cups Vegetable or Beef Broth
2 Tbsps. Red Wine or Dry Sherry
1 tsp. oregano
1 tsp. thyme
1 tsp. basil
Himalayan Salt and Crushed Black Pepper to Taste
1/2 cup grated swiss cheese
1/2 cup grated parmesan cheese
Directions
Melt butter with olive oil over medium heat in a large stock pan.
Add onions, stirring frequently till tender and clear.
Add, both, wine, oregano, thyme and basil. Then, season with salt and pepper.
Let simmer for 30 to 40 minutes.
Preheat the oven’s broiler.
Then, laddle the soup into oven safe bowls. Add a slice of bread or two with Swiss and Parmasan cheese on top.
Place in oven for 2-3 minutes until the cheese bubbles and browns. Serve warm and ENJOY.
