Creamy Tremella Mushroom & Kale Soup

Creamy Tremella Mushroom & Kale Soup

A velvety, slightly sweet, deeply umami soup that highlights the tremella’s unique feel. Tremella is almost flavorless on its own but gives the soup a luxurious texture. A simple morning soup to hydrate and nourish all of you.

Ingredients

  • 1 quart Vegetable Broth + 1 cup water

  • 1 Tbsp. Olive Oil and 1 Tbsp. Ghee

  • 1 Tbsp. Coconut Cream with ¼ cup milk

  • 1 Tbsp. Tremella extract powder, Superfeast

  • 1 c mixed mushtooms, sliced

  • 1 small apple, remove skin, chopped

  • 1/2 Bunch, Kale, thinly sliced

  • 1 Tbsp. Sesame + Sunflower Seed Crunch

  • 1 Tbsp Japanese Seasoning

  • 1 Juice of ½ of a lemon

  • ½ tcp .Crushed Black Pepper

  • ½ tsp. Pink Himalayan Salt

  • Crushed Black Pepper + Himalayan Salt

  • to add 1 or 2 Soft Boiled Eggs in each bowl of soup.

Directions

  • In medium sauce pan, add oil, coconut milk tremella extract and heat till forms a gel like paste.

  • Then, add 1/2 cup of the vegetable broth with ghee.

  • Add coconut cream and mushrooms.

  • Stir till blended. Then, add Kale and Apples.

  • Add the remaining vegetable stock and water if needed or you can add later.

  • Then, add fresh lemon juice, black pepper, salt and sesame seed crunch . Stir often. Simmer on low heat for 45 minutes.

  • Taste mid-way though and add spices as needed.

  • Add water as needed to have a brothy soup.

  • Make soft boil eggs, right before ready to eat. A 1-2 minute egg.

  • Serve in bowls with soft boil egg(s) Japanese Seasoning on top.

In Winter + Fall time, like summer time, the best way to hydrate is with your food. Morning soups are a powerful way to feed your digestive fire, warm up your body and hydrate your entire system. This soup recipe includes one of my favorites from SuperFeast Tonic Herbs .

A little dot connecting. When your emotions have a huge upheaval coupled with persistent stress/anxiety, low nutrient dense meals and/or substances that diminish your life force, your immune system will be compromised. The key is to be mindful with your emotions and the food you nourish yourself with. This awareness will assist keeping you in well being during the fall/spring. These seasons are historically filled with cold/flu and/or sinus/allergy upheaval. As inspired, nourish yourself proactively with nutrient dense foods and retain your emotional awareness.

If you happen to over indulge in the holiday blues or one too many Yuletide treats, star of anise, is a helpful friend. It is a warming herb that will get things moving and breaks up stagnation. It is anti all the things that can put your left of center (oxidants, microbes, fungus). To test it out, you can simply steep one pod in hot water and sip it gently. See how it feels and your body responds. If it feels good, then sip on a cup or two. Alternatively, you can make a warm cider or a seasonal recipe with star of anise.

Mind You + Food

Above a simple Hungarian cookie recipe, Keksz, (means hard cookie) from my childhood BFF’s grandmother made these when she would visit and mail them to her. It was the prefect cookie. I think this year, I unlocked making the recipe almost like she would make them. 😀

A recipe, the result and a memory are so powerful, they instantly transport you back to a moment suspended in “space”. More than not, this will bring you back to a warm and comforting moment that releases the happy chemicals throughout your entire being.

In addition , this unlocked a happy memory with my children. As we baked together, I shared the cookie lore, a memory unlocked for them too. This cookie was a staple in their childhood during all seasons. All of which inspired me to reach out to my friend with a photo and a chat ensued about the blessing her grandmother was to both of us. The wave of love and smiles transcended decades of our life all through one simple cookie and a joy filled bite.

As inspired, pull out one of those recipes and see what happens. May you savor what unfolds.
