Mind You + Food
Meal Prep is a very simple way to proactively prepare for the week ahead. It can lighten your mental state of being by eliminating daily meal preparation and decision-making around what to eat. This preplanning is super valuable to ensure you are nourished consistently. What I witness in most “Americans” (especially women) is malnourishment. We do not slow down to eat consistently and nutrient-rich foods, coupled with the hyper-fixation with taking artificial “things” to retain well-being and/or a youthful appearance. The elephant in this room is a present-moment nutrient deficiency that can lead to a long-term deficit in your mental, physical, emotional, and spiritual body. If you are inspired, create space for making meals daily for yourself or meal prep for a few days at a time. In the East, it is recommended fresh food is best for every meal, meaning you cook each meal before each meal. I personally would love to see people eating well-thought-out prepped meals versus not eating at all or eating ‘fast’ food. The reason for this, from a nutritional lens (East and West), is you will get nutrient-rich food consistently. If you cannot make your food fresh at each meal, then this is the way to go. Here is a meal I recently prepared for a client. May it serve as a simple inspiration. This is a late summer modified kitchari, a lot lighter to digest for this time of year. Cauliflower Kitchari

1 cup lentils (e.g., green or brown)
1 cup cauliflower rice of basmati rice (1/2 cup)
1/2 cup carrots, sliced or chopped
1/2 cup celery, chopped
1/2 cup yellow squash, cubed
1/2 cup cherry tomatoes
1 cup kale, chopped
1 tsp fresh grated ginger
1 tsp turmeric
1 tsp cumin
3/4 tsp coriander
1/2 tsp fennel seeds
Optional: Pinch of cardamom
4 cups vegetable broth or water
Himalayan Salt and Fresh Crack Black Pepper to taste
1 tbsp ghee and
1 tbsp olive oil
Fresh cilantro
1 lime, quartered
Directions
Rinse lentils and cauliflower rice
Heat ghee and olive oil in a pot, sauté ginger until fragrant.
Add turmeric, cumin, coriander, and fennel seeds, stirring for 1 minute.
Add lentils, cauliflower, carrots, celery and squash. Pour in broth or water.
Bring to a boil, then simmer for 20-25 minutes until lentils and veggies are tender.
Stir in kale, cook for 5 more minutes. Season with salt and pepper.
Serve warm with fresh lime slices and cilantro. You can add a side of steamed broccoli and roasted yam.

In Ayurveda, it can increase your digestive fire, which can assist in balancing Vata and Kapha. In addition, it can increase Pitta, meaning it can balance the mind and nervous system and ground your energy while adding a little pep to your step. If you tend to lead with your fire, this unassuming garden friend can increase inner flame and become aggravating, which can be beneficial depending on the day and your mood. Supportive to the lungs, digestive system, bladder, and skin. In TCM, supports: Stomach, Spleen, Kidney.
How does Dill help? Anti-all the things. Supports: Tones Yang (Masculine Energy), Keeps the Qi Moving, Disperses Cold, Supports Stomach, Spleen Qi, and Large Intestine. It has been said that dill can serve as a remedy for loss of appetite, stomach ache, bloating, gas, constipation, colds, flu, coughs, menstrual cramping, nerve pain, pain in the abdomen, anxiety, depression, psoriasis, wounds, genital ulcers, liver, and much more.
