Peruvian Baked Patatas: A Flavorful Side Dish with Ancient Roots

Warm up your kitchen with this delightful Peruvian-inspired side dish or starter. “A Peruvian Baked Patatas (Potato),” perfect for any occasion. These new potatoes are baked to tender perfection, infused with the rich flavors of olive oil, sweet paprika, and oregano, and finished with a touch of butter, salt, and optional chili pepper for a subtle kick. With a history rooted in the ancient culinary traditions of Peru, this dish brings a vibrant and comforting taste of South American heritage to your table, ideal as a starter or side for any meal.

Ingredients

  • 12 baking baby potatoes, scrubbed and pat dry

  • Olive oil, to brush on potato skins

  • Sweet paprika and oregano, to sprinkle on potato skins

  • Salt (coarse preferred) and pepper (chili pepper if you like)

  • Butter

Directions

  • Preheat the oven to 375°F.

  • Prick the potatoes a few times with a fork and bake them in the middle of the oven for 45-55 minutes. Place in a roasting dish and lather with olive oil. Connect with the potatoes as you rub them down. You might even smile and send them some love. Then, place in the oven.

  • Remove them from the oven and place a towel over to let them rest.

  • Gently cut the potatoes open and place butter inside, add paprika, salt, and pepper.

  • Then brush with a small amount of olive oil and place back in the oven for 9 minutes.

  • Place on a platter and serve. Garnish with fresh tomatoes, pine nuts and oregano. Dust the potatoes with paprika. Enjoy.

    Peruvian Patatas History

    Potatoes, or “patatas,” are a cornerstone of Peruvian cuisine, with the region being one of the birthplaces of potato cultivation dating back 6,000 to 8,000 years. Indigenous peoples in Peru and Bolivia domesticated the potato, and it became a staple crop long before it spread to Europe and beyond in the 15th century. The use of spices like paprika, derived from peppers native to Central and South America, reflects Peru’s deep connection to bold, earthy flavors. Paprika itself, as highlighted in the post, has a history tied to the Americas, where peppers were first cultivated before being introduced to Spain and eventually Hungary, becoming a global spice. This recipe for baked patatas showcases Peru’s legacy of transforming simple ingredients into flavorful, nourishing dishes, often enhanced with local seasonings and cooking techniques like roasting, which were common in traditional Andean kitchens.

    Paprika. A red pepper friend with a range of flavors and temperatures. Smokey, sweet and hot sensations inviting you to discover within the deeper essence the prepared dish. Paprika history origins suggest these peppers started in Central America, Mexico (5,000 to 6,000 years ago) and South America, Peru and Bolivia (6,000 to 8,000 years ago). From here the dried peppers and ground spices were transported to Spain (15th Century), India (15th-16th Century), China, Southeast Asia, Korea, Japan and Hungary (16th-17th Century). Which has lead to these pepper plants to be cultivated around the world.

    With the range of flavors created from paprika, this makes it a unique and versatile addition to many dishes from around the world.
