Nacho Chips
8 oz Burrata
1 pint Cherry Tomatos, Chopped
1/2 Red Onion, minced
1 Bunch of Cilantro
3-4 Tomatillo, roasted
5 Cloves of Garlic
1 Yellow Onion, chopped
1/4 C Balsamic Vinegar
1 Jalapeno, sliced
1-2 Thyme, sprigs
1 Lime, Juice
Himalayan Salt + Cracked Pepper, to taste
2 Cups Black Bean, Soaked 24 hours
1/2 C. Olive Oil
1 Tsp. Chili Flakes
1 Tbsp Cacao Chips
Directions
Wash and chop all ingredients.
Blend cherry tomatoes, red onion, 2 cloves garlic-minced, 2 Tbsp olive oil, 2 Tbsp Olive Oil, Balsamic Vinegar and 3 Tbsp Chopped Cilantro in a medium bowl. Add Himalayan Salt and Cracked Pepper to taste.
Heat oil on the base of the sauce pan add onion and garlic. Once soft add the below ingredients. Cook black beans in a sauce pan with 4 cups of water, 1 tbsp. olive oil, thyme sprigs, cacao chips, 1 clove garlic, 1/2 tsp. chili flakes and 1/2 yellow onion minced. Cook on low until soft. These can be made the night before.
Roast in a small saute pan, 1/2 yellow onion, 1 clove garlic, tomatillo, jalapeño, and olive oil. Once softened, add to the blender with juice of lime, 2 Tbsp cilantro, Himalayan Salt, Cracked Pepper, and 1/2 tsp. chili flakes.
Fold Green Verde Sauce into Bruschetta Mixture.
Take a serving plate. First layer tortilla chips, burrata, bruschetta salsa verde, cilantro, and black beans. Repeat. Top with Fresh Cilantro. Serve extra beans on the side.
Late Summer, Mexicano y Italiano Nachos…Worlds Merge. This was so good, I wanted to drink the bruschetta-verde salsa. I blended the verde salsa into the classic bruschetta base.
Simply put. I layered like the nachos like this: corn chips, burrata, bruschetta base blended with chili verde tomatillo salsa, homemade black beans, lime and cilantro. It is the perfect easy meal, snack or appetizer as we ease out of late Summer into FALL.
