Immune Boost Soup

minutes4 Cups Vegetable Broth
3 Cloves Garlic Minced
1 Small, Yellow Onion, chopped
1 Cup Carrots, sliced
1 Cup Celery, sliced
1 Cup Mushrooms, seasonal
2 Cups Collard Greens, chopped
1 Cup Red Potatoes, chopped
1 Cup Purple Cabbage, Sliced
2 tsps. Turmeric
2 tsps. Cayenne Pepper
Himalayan Salt and Cracked Pepper, to taste
2 Tbsp. Olive Oil
1 Tbsp. Ghee
1-2 Cup Clean Water
1/4 Cup Sunflower Seeds
1/4 Cup Red Cabbage, Sliced
Measure and prep all ingredients.
Add Oil and ghee to stock pan. Turn heat up to medium.
Add Onions and Garlic. Start to cook down. Then, add all the spices. Add 1/4 cup of the vegetable stock with turmeric, cayenne pepper, salt and pepper.
Add Celery, Carrots, and Mushrooms to the pan. Sauté.
Add Collard Greens, Red Potatoes, Purple Cabbage and 1/4 cup of the Vegetable Stock.
Add the remaining stock. Heat for 30 minutes. Add additional water if needed.
Tast test. Add additional seasoning as needed. Reduce heat or turn off and let stand till ready to serve.
Serve in a bowl. Add fresh cabbage and sunflower seeds on top. Serve with warm bread and a side salad. Enjoy.
