Recipes: Coconut Mushroom Empanadas, Steamed Crisp Pan Fried Broccoli, and Coconut Cream Mushroom and Chicken Soup.

Coconut Mushroom Empanada

Ingredients

  • 1 Russet Potato (baked + cubed)

  • 1 Cup Seasonal Mushrooms, diced

  • 1/2 Yellow Onion, chopped

  • 2 Cloves of Garlic, minced

  • 1/2 Cup Carrot, chopped

  • 1/2 Cup Celery, chopped

  • 1 cup chicken thigh, diced

  • 2 Tbsps. Butter (Ghee)

  • 2 Tbsps. Olive Oil

  • 1 tsp. Thyme

  • 1 tsp. Himalayan Salt

  • 1 tsp. Cracked Pepper

  • 1 tsp. Chili Pepper

  • 1/2 Cup Vegetable Broth

  • 1/2 Cup Coconut Milk

  • Homemade Dough or Store Made

Directions

  • Prep, chop and measure all ingredients.

  • Heat a wok to medium heat. Add the Ghee and oil. 

  • Add onion and garlic. Saute.

  • Add spice, carrots, celery and chicken thigh.

  • Saute till it begins to brown and soften.

  • Add 1/2 cup coconut milk and 2 Tbsp. vegetable broth.

  • Allow to simmer. As the mixture thickens, add more broth as needed.

  • Remove from heat. Pre-heat the oven 375 degrees.

  • Roll out dough into circles 6″ in diameter.

  • Add 2 Tbsps. of filling in the middle of the circle. Then, fold over and seal the edges.

  • Bake for 20-25 minutes till outside is golden brown.

  • Add the additional broth to the remaining filling, heat and serve on the side with the empanadas.
