Lemon Blueberry Muffins

minutesThis yummy recipe serves as a breakfast of brunch favorite or a spring dessert paired with fresh whipped cream or gelato with additional blueberries.
Ingredients
1-3/4 C. All-Purpose Flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. himalayan salt
1 tsp. cinnamon
6 Tbsp. unsalted butter, room temperature
3/4 C. coconut sugar
1 Tbsp. lemon zest
2 eggs
1/2 Cup plain yogurt
1 tsp. pure vanilla
1/4 C. Milk
1/2 lemon juice, fresh
1 cup fresh blueberries
- Crumb Topping
1/3 C Flour
2 Tbsp. Coconut Sugar
1 tsp. lemon zest
2 Tbsp. unsalted, butter.
Directions
Preheat oven for 350 F.
Please a parchment paper in muffin tin cups.
Gently stir the flour, baking soda, baking powder, salt and cinnamon into a medium bowl.
In a large bowl, beat the butter and sugar together on medium speed until smooth and creamy.
Scrape down the sides of the bowl. Then, add the lemon zest and beat till blended.
Add the eggs, yogurt, vanilla, milk and lemon juice. Blend till creamy.
Then, stir in dry ingredients slowly and until batter is well blended and thick.
Fill prepared cupcake tins to the top.
Blend Crumb Topping and add it on top.
Add topping onto the batter.
Bake for 15-20 minutes. or until the woodtester comes out clean.
Remove from the oven. Let cool for 5 minutes in pan and then finish the cooling on a wire rack.
Enjoy with someone you love.

Grief is an emotion that can stick to you like glue and creates mucous in the lungs. The mucous is your friend as it wants to help move the grief up and out of your system. This is not by accident that the lungs and grief work hand in hand. In addition, the anger is part of the grieving process because the liver is our amazing allay to help us naturally remove toxicity. The simple practices when grief rises is to allow the energy to flow, the helpfulness of your tears, water and salt, purify and cleanse the grief with the opportunity to call upon joy, laughter, to guide you out of the sorrow into the waves of happiness. With skillful means and discipline you will learn how joy can help you stop all roads leading to despair and angry eruptions.

Spring and Fall Friend. Licorice Root. The more and more I sit with sharing what the plants have to offer all of us, I hesitate to say it will do this or that. This is for many reasons. The most important one is you are unique and what works for you might not work for another and/or you might be taking other herbs, foods and prescriptions that have a contraindication with this root and/or others. Winter to Spring Pesto Orzo

minutesAs days get longer and gardnes green this is the perfect winter to spring meal that compliments the cool weather and citrus everywhere.
Ingredients
2 Tbsps Olive Oil
2 Tbsps Butter
2 Cloves Garlic, minced
1 medium onion, chopped
1 tsp. Thyme, Dried
1 tsp. Oregano Dried
1 tsp. Fennel, Dried
1 tsp. Chili Flakes Dried
1-1/2 Cups Risotto or Orzo
4 Cups Vegetable Stalk, Warmed on Stove Top
1 Bunch Of Asparagus (Stalks, chop 1/2” in length, keep tips full length)
1 pint Shiitake mushrooms, sliced
1/2 Cup Parmesan Cheese
Himalayan Salt and Cracked Pepper to Taste
- Cilantro Pesto
1/2 Cup Lemon Juice
1 Cup Walnuts
2 Cups Cilantro
1 Steamed artichoke base and heart, chopped
1 Tbsp Olive Oil
Himalayan Salt and Cracked Pepper
Directions
Heat 2 Tbsp olive oil and 1 Tbsp of butter in medium saucepan.
Add Onions and Garlic over medium heat for 2-3 minutes.
Add Spices and Rice Coat evenly. Pour in 1 Cup of Veggie Stock and bring to a boil, until nearly evaporated.
Add the asparagus stalks, mushrooms and add warm vegetable stock (1/2 cup at a time). Stirring Medium-High heat until the stock is absorbed and the rice is tender. This will take about 20 minutes. (Stay by the stove during the process. Stir with love.)
Steam the Artichoke while with is cooking.
Remove from heat stir in Parmesan Cheese and remaining Butter. Cover.
In food processor, add lemon juice, walnuts, cilantro, artichoke, olive oil with cracked pepper and Himalayan salt. Blend.
Stir in mixture to the Orzo Blend. Let it stand for 2-3 minutes, before serving.
Serve with toasted rustic bread and a simple green salad.
