Furthermore, we will dive in to cultural and food appropriation. I will share my reflections and encouragement of reconciliation from within. Finally, take these brief moments to connect with you and the “food” you feed yourself daily. Learn how to listen to you.

Roasted Winter Salad

1 Head Purple Cabbage, Slice Wedge
1 Fennel Bulb, sliced
4 Beets, quartered
1/2 lb. Brussel Sprouts, quartered
2 Tbsp. Olive Oil
Romaine, Chopped
- Lemon Herb Dressing
1/2 Cup Olive Oil
1 Lemon, Juice of
1 tsp. Thyme, fresh or dried
1 tsp. Oregano, fresh or dried
1 tsp. dark mustard
Himalayan Salt + Cracked Pepper
Directions
Pre-Heat the oven for 375 F
Prep the veggies (except the romaine lettuce) as noted above and place oil in the bottom of a cast iron skillet.
Roast the veggies for 30 minutes. Remove the Cabbage and Brussel Sprouts. Then, roast the beets till tender. (About 15 more minutes).
In a serving dish, add the chopped romaine lettuce.
Then, add slice the cabbage and beets. Mix all in a bowl then layer on the lettuce.
Place all the dressing ingredients in a jar. Then, shake to blend.
Gentle toss the salad with the dressing. Add amount to your liking.
Add additional salt and pepper to taste.
Enjoy as a meal or a side dish.
Winter Power Snack:
Simply split open a date. Remove the pit. Add your favorite nut or seed butter. Top with your favorite crushed nut.
